Nuchchi

The name Nuchchi is derived from Kannada word Nuchchu(Broken). Broken rice is used to make Nuchchi but some also use whole Basmati or Jeera rice to make this. This can be eaten for breakfast, lunch or dinner. Very band but tasty, this is essentially made with aromatic rice. Now a days, broken basmati rice is available at many major stores and that works out slightly cheaper than whole basmati rice.
Ingredients:
Broken Basmati or Jeera Rice - 1 cup
Water - 2 1/2 Cups
Salt - To taste
Grated coconut - 1/2 Cup
Mustard seeds - 1/2 Tsp
Methi Seeds - 1/4 Tsp
Urad Daal - 1/2 Tsp
Coconut Oil or ghee - 1 Tsp

Method:
Wash the broken rice thoroughly and drain.
Prepare a seasoning with mustard seeds, methi seeds and urad daal in oil in a wide mouthed thick bottomed vessel.
Add water salt to taste and grated coconut.
As water begins to boil, add the washed broken rice, mix well, cover and simmer till all the water has been absorbed and the nuchchi is cooked.
Serve with choice of pickle and any vegetable for lunch or dinner. As a snack, you can serve this with spicy chutney or pickle.
